Chocolate Sugar Cookies {gluten free}

I started out by making a chocolate sugar cookie, but with gluten free flour and didn’t like how the texture was turning out so I added more fat (always a good plan!) as in cream cheese. This has now become a staple recipe for me. I love the texture with the cream cheese and they turn out to be a very brownie like cookie! I have made them a few different ways, either by rolling the dough in sugar before baking, or adding white chocolate chips to the recipe. The photo shows the cookies with white chocolate chips added and not rolled in sugar. You can’t go wrong with either method. Enjoy!

2 Cups plus 2 Tablespoons Gluten Free AP Flour

¾ Cup Cocoa Powder

1 teaspoon Baking Soda

¾ teaspoon Salt

2 ½ Sticks (1 ¼ Cup) Unsalted Butter, room temperature

1/4 Cup Cream Cheese, chilled

2 Cups Sugar, plus more for rolling (1/2 Cup) (optional)

2 Eggs

2 teaspoons vanilla

White Chocolate Chips (optional)

  1. Preheat oven to 350°F
  2. Line 2-3 baking sheets with Parchment Paper
  3. Sift together Flour, Cocoa Powder, Baking Soda, and Salt in a separate bowl
  4. In a stand mixer with a paddle attachment, mix together the sugar, cream cheese, and butter until light and fluffy
  5. Add eggs one at a time followed by the vanilla, mix until just combined.
  6. Slowly add the flour mixture, scraping the sides until combined
  7. Add white chocolate chips (optional)
  8. Chill dough for 10min
  9. Roll cookies into 1″ diameter balls & roll in sugar (optional)
  10. Bake for 15min or until slightly firm to the touch
